Chia Seed Pudding

Here is a healthier option for pudding.  We’ll start with traditional Chia Seed then add some options to get creative.  Add the flairs that make you go Mmmm!

What you’ll need:

  • 1 – 14 ounce can of coconut milk (check the label, it should only have coconut extract and water), organic if possible
  • 4 tbsp. maple syrup (the real stuff)
  • 1 tbsp. vanilla extract
  • 1/3 cup chia seeds

Directions:

  1. Add all ingredients to a bowl.
  2. Whisk until blended.
  3. Cover and let stand at room temperature in the bowl for 2 hours.
  4. Get fancy and spoon into individual glasses.
  5. Serve.
  6. Refrigerate any leftovers if there are any.

Pudding will stay fresh for up to five days stored in the refrigerator.

Let stand at room temperature for 15 minutes before serving after removing from the refrigerator.

Options – Get Creative

Add 2 tbsp. cocoa powder unsweetened – Now you have Chocolate Chia Seed Pudding

Top with berries

Drizzle chocolate sauce on top

Add lemon juice for Lemon flavored pudding

Blend 1/2 cup raspberries with coconut milk then add the rest of the ingredients

2 tbsp. cocoa powder and 1/4 cup of creamy peanut butter added to the above recipe

Sprinkle pomegranate seeds on top – get crazy and add some chocolate shavings and flaked coconuts too

Before serving mix in some chopped mango and coconut flakes

Top with chopped strawberries and bananas
