Lemon Cookies without Flour

Are you working on staying away from grains/flour and refined sugar?       But you want a cookie.  Look no further, this recipe is for you.

What you’ll need:

  • 1 cup of cashew butter
  • 1/4 maple syrup
  • Juice of 1 lemon
  • pinch of Celtic sea salt

Directions:

  1. Preheat oven to 350 degrees
  2. Using a food processor add all ingredients.  Process until smooth.
  3. Cover baking sheet with parchment paper.
  4. Using two teaspoons scoop a ball of dough with one teaspoon and scrape/drop off with the other.
  5. Bake cookies for about 12 minutes.
  6. Cool completely.
  7. Remove and store in an airtight container. (I prefer using glass)
  8. By storing in the refrigerator they will last two weeks.

This recipe makes about 2 1/2 dozen cookies.

Make a double batch and freeze some.  Pull them out of the freezer, thaw and treat yourself.

These cookies are creaming but delicate.  Handle with care.
