Creamy Potato Soup

There is something special about sitting down to a homemade bowl of soup.  It is made with love and care to heal the soul, okay that is my take on it 🙂 and I’m sticking with it.

What you’ll need:

  • 2 tbsp. butter
  • 1 large sweet onion chopped
  • 1 stalk of celery chopped
  • 1 clove garlic minced
  • 1/8 to 1/4 tsp. rosemary crushed
  • Potatoes  10 to 12 cups peeled and cubed (I use Yukon/golden potatoes – when the skin is thin like on a Yukon you can leave the skin on if you like)
  • 2 quarts of chicken stock or bone broth (I prefer homemade bone broth)
  • 2 to 3 tsp. Celtic sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1 cup heavy cream
  • 1 1/2 cups diced cooked ham

Bakery Style Bagels made at Home

Freshly baked bagels, Yes!  Here is a simple recipe to get those warm bagels right at home.

What you’ll need:

  • 4 cups Einkorn flour (If using bread flour, omit the baking powder)
  • 1 1/4 cups warm water
  • 1 tbsp. active yeast
  • 1 tbsp. baking powder (aluminum-free)
  • 1 tbsp. sucanat, coconut sugar or brown sugar – organic preferred
  • 2 tsp. Celtic Sea Salt
  • Egg white from one egg
  • About 1 tbsp. Coconut or olive oil
  • 2 quarts water
  • 1/4 cup honey or barley malt syrup

Potato Peel Stock / Potassium Broth

Potassium broth is healthy & healing.  It is simple and affordable to make.

The following are the basic broth ingredients – ideally organic

What you’ll need:

  • Potato peels from about 6 scrubbed potatoes
  • 1 sliced onion
  • 2 to 3 sliced carrots (not peeled)
  • 1 to 2 sliced celery ribs
  • Fresh or dried parsley
  • 2 to 4 quarts filtered water

With the basic ingredients listed, you can actually use whatever is in your kitchen. The above list is a guideline to start with, be creative. I save my organic trimming including onions ends & skins, carrots, garlic – okay basically my veggies scraps.  They are kept in a gallon freezer bag for making broth. Lasagna with White Sauce & Italian Sausage

A new twist on an old tried and true classic – Lasagna.  This recipe speaks of true comfort food to satisfy your body and soul.

The creation was sparked all because I had four Italian sausages that needed to be cooked.  Usually, I love them grilled with peppers and onions, but that was not the cast this particular day.  So my brain started churning. Using loaf pans two creations evolved. One with sauteed mushrooms and one with chopped red pepper.

What you’ll need:

  • 10 lasagna noodles uncooked (Barilla Oven-ready lasagne noodles – no prior cooking required or for a healthier choice use whole wheat or brown rice lasagna noodles – follow cooking instructions some require boiling first while other brands are oven ready.  Another option is to make your own pasta using Einkorn flour.)
  • 4 Italian sausages cooked (I grilled mine) sliced thin
  • 24 ounces of cottage cheese
  • 8 slices of provolone cheese
  • 1 cup of grated Romano cheese
  • 1 large sweet onion chopped
  • 2 cup of chicken broth or bone broth
  • 1/4 Einkorn flour
  • 1 cup of heavy cream
  • 2 tbsp. butter
  • 8 ounces sliced portabella mushrooms
  • 1 red pepper chopped
  • 2 to 4 cloves of garlic minced
  • 1 tbsp. Celtic sea salt
  • 1 tsp. pepper
  • 1 tsp. thyme
  • 1/2 tsp. rosemary
  • 1/2 tsp. oregano
  • 2 loaf pans

Apple Crisp – Single Serving Style

  • 7 medium-sized apples – I used organic pink lady apples
  • Juice of one lemon
  • 3/4 to 1 cup rolled oats – not quick-cooking
  • 1/2 cup Einkorn flour
  • 1/4 cup coconut sugar (you can also use brown sugar)
