Lasagna with White Sauce & Italian Sausage

A new twist on an old tried and true classic – Lasagna.  This recipe speaks of true comfort food to satisfy your body and soul.

The creation was sparked all because I had four Italian sausages that needed to be cooked.  Usually, I love them grilled with peppers and onions, but that was not the cast this particular day.  So my brain started churning. Using loaf pans two creations evolved. One with sauteed mushrooms and one with chopped red pepper.

What you’ll need:

  • 10 lasagna noodles uncooked (I use Barilla Oven-ready lasagne noodles – no prior cooking required)
  • 4 Italian sausages cooked (I grilled mine) sliced thin
  • 24 ounces of cottage cheese
  • 8 slices of provolone cheese
  • 1 cup of grated Romano cheese
  • 1 large sweet onion chopped
  • 2 cup of chicken broth or bone broth
  • 1/4 Einkorn flour
  • 1 cup of heavy cream
  • 2 tbsp. butter
  • 8 ounces sliced portabella mushrooms
  • 1 red pepper chopped
  • 2 to 4 cloves of garlic minced
  • 1 tbsp. Celtic sea salt
  • 1 tsp. pepper
  • 1 tsp. thyme
  • 1/2 tsp. rosemary
  • 1/2 tsp. oregano
  • 2 loaf pans

Apple Crisp – Single Serving Style

Yes, you deserve your very own single-serving apple crisp!  What a delightful way to serve a tried and true dessert.  Smelling Apple Crisp baking truly feels like home.

What you’ll need:

  • 7 medium-sized apples – I used organic pink lady apples
  • Juice of one lemon
  • 3/4 to 1 cup rolled oats – not quick-cooking
  • 1/2 cup Einkorn flour
  • 1/4 cup coconut sugar (you can also use brown sugar)
  • 3 Tbsp. softened butter
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground ginger

Chia Seed Pudding

Here is a healthier option for pudding.  We’ll start with traditional Chia Seed then add some options to get creative.  Add the flairs that make you go Mmmm!

What you’ll need:

  • 1 – 14 ounce can of coconut milk (check the label, it should only have coconut extract and water), organic if possible
  • 4 tbsp. maple syrup (the real stuff)
  • 1 tbsp. vanilla extract
  • 1/3 cup chia seeds

Bone In – Oven Baked Chicken Piccata

Okay, this is not your traditional  Chicken Piccata recipe.  What I mean by that is Chicken Piccata is normally prepared with skinless boneless chicken breast cutlets.  Today it is all about the dark meat.  This recipe uses chicken thighs and legs with bone and skin still on. Let’s get started, this turned out to be a mouth-watering delight!

What you’ll need:

  • 4 Chicken thighs & 4 legs – with bone and skin on
  • 1/2 cup Einkorn flour
  • 1 tsp. Paprika
  • 1 tsp. Celtic sea salt
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. dried Rosemary
  • 8 oz. sliced baby Portobello mushrooms
  • 1 Medium thinly sliced onion
  • 1 cup bone broth or chicken broth
  • 1/2 cup white wine (I used Sauvignon Blanc)
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. drained capers
  • 1 tsp. Celtic sea salt
  • 2 cloves garlic, minced
  • 1/8 tsp red pepper flakes
  • 2-3 Tbsp. butter (you could also use glee or coconut oil for browning the chicken)
