Crock-pot Mac & Cheese


  • 12oz. to 16oz. box of dried pasta (I use Einkorn pasta)
  • 6 cups of milk
  • 3 cups of grated cheese (I used 1/2 cup of parmesan and the rest sharp cheddar)
  • 1/2 cup flour (I use Einkorn)
  • 1. Tbs. butter
  • 1 tsp. Celtic Sea salt
  • 1 tsp dried minced onion
  • 1/4 tsp. dried mustard
  • 1/4 tsp. paprika
  • 1/4 tsp. granulated garlic
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • Fresh ground pepper to taste
  • Pinch of cayenne pepper

Garlic & Herb Vinaigrette Salad Dressing

Homemade salad dressing is easy to make, affordable and you control the ingredients.

Have you read the labels of most store-bought dressing?  Their ingredients can be downright scary. So let’s do this.


  • 1/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, minced
  • 2 tsp. Dijon mustard
  • 2 tsp. honey
  • 1 tsp. dried oregano
  • 1 tsp. dried parsley
  • 1 tsp. Celtic sea salt
  • 1 tsp. dried onion flakes
  • 1 tsp. mayo
  • 1/2 tsp. freshly ground pepper

Easy Kimchi

Not your traditional Kimchi – but, boy oh boy it’s yummy!


  • 1 head Napa cabbage, cored and chopped (bite-sized pieces)
  • 1 bunch chopped green onions – 1″ pieces
  • 1 cup grated carrots or skinny matchsticks
  • 1/2 cup grated daikon radish
  • 1 tbsp. grated ginger
  • 3 cloves minced garlic
  • 1/4 cup Korean red pepper powder (increase or decrease to taste)
  • 1 tbsp. Celtic Sea salt
  • Quart size mason jar

Savory Sweet Potato Cubes


  • 4 to 6 sweet potatoes depending on size (enough to fill your pan)
  • Half a sweet onion chopped
  • 4 or 5 minced garlic cloves
  • 1/2 tea thyme
  • 1/4 tea red pepper flakes, if you like it hot add more
  • 1 tea Celtic sea salt
  • Lots of fresh ground pepper
  • 9×13 baking dish
  • 2 to 3 tbsp melted coconut oil (preferred organic)

With all recipes, you can adjust the spices to fit your palate.  The heat from the red pepper flakes I find quite yummy, however, it’s too spicy for my husband.

Mark who gave me the recipe stated to put Lots of red pepper flakes, the 1/4 teaspoon worked well for me.  I also added the onion, what can I say, onion seemed like a must 🙂 Continue reading Savory Sweet Potato Cubes

Not your average Chicken Patty

What you’ll need:

  • 1 lb. ground chicken
  • 1 ½ cups sourdough bread (processed in food processor to create soft breadcrumbs)
  • ½ of a medium sweet onion (processed in food processor)
  • 1 medium to small carrot (processed in food processor)
  • 2 cloves of garlic
  • ½ tsp. Celtic sea salt
  • ½ tsp. Thyme
  • ½ tsp. Basil
  • Fresh ground pepper

*Makes about 8 chicken patties

Mouth Watering Zucchini Stir Fry

What you’ll need:

  • 2 Zucchinis – spiralized
  • 1 small sweet onion thinly sliced
  • A hand full of grape tomatoes (give or take to your liking) quartered
  • ½ teaspoon dill
  • 1 minced garlic clove
  • 1 teaspoon butter
  • ½ teaspoon Celtic Sea Salt
  • Freshly ground pepper to taste
  • Parmesan cheese grated (a little or a lot, your choice)
