Cucumber, Tomatoes, and Cheese, Oh My! (Salad Recipe)

Are you looking for a quick, healthy salad?

Do you have an abundance of your garden veggies?

This recipe is great to make the perfect salad for one or a weekend family picnic.  Simply slice up some cucumbers, chop up some tomatoes and cube up some cheese.

Place all ingredients in a bowl and drizzle with organic olive oil and balsamic vinegar.

 

Salt and pepper to taste.  Toss gently.  Serve immediately.

Enjoy as a meal or side dish.

Fresh Garden Salad

  • Slice up one cucumber
  • Dice up one tomato
  • Cube up some mozzarella cheese
  • Organic olive oil
  • Organic Balsamic vinegar
  • Celtic sea salt
  • Ground pepper
  • Chopped fresh basil, oregano or cilantro (optional)

Place all ingredients in a bowl and toss gently.

This salad can take on a variety of flavors.  Change the cheese to feta it tastes completely different.  Instead of using balsamic vinegar try using some beet kvass, bam another dynamic twist on this salad.  Gardens are loaded with fresh herbs this time of the year, get crazy and add some.  Do you have zucchini instead of cucumber?  Use them instead.  The beauty of cooking is you can change up, you are the cook.

Between the crunch of the cucumber, the juicy sweetness of the tomatoes and the creamy texture of the cheese it is a hit every time.
